Caprese Bruschetta

This is a cute spin on the traditional Caprese salad. Use all different colors of cherry tomatoes for extra color

One baguette, sliced into thin pieces

Cherry tomatoes, slice lengthwise

Whole leaves of EverSummer Basil

Fresh mozzarella cheese balls, the small ones (available at Whole Foods and other markets)

Olive oil and balsamic vinegar

Mix 1/2 cup olive oil with 1/8 cup balsamic vinegar and shake well. Slice each mozzarella ball into three or four discs.

Lay baguette slices on serving platter. Drizzle oil and vinegar mix lightly over each piece of bread. Set one whole basil leaf on bread, and top with mozzarella disc. Set cherry tomato half on top.  You can toast the bread before you top it, if you’d like.
